#1 Fruity Vegan Bundt Cake

Isn’t this bundt cake gorgeous for the Christmas table? The traditional heavy bundt cake with pieces of succade that was served at our place during Christmas was never a favorite. But we find it very hard to resist this light, fruity version with pieces of chocolate (surprise on the inside!). You understand, it was very annoying to have to test it a few times here at the office… Gluten-free and cruelty-free, a feast on the table!

#2 Vegan Scramble

No eggs needed for this recipe, we make the scramble from tofu. Tofu!? Yup, trust us, this will be incredibly tasty. And the nice thing is that you bypass the (saturated) fats and cholesterol from eggs, while still getting a good dose of essential amino acids (proteins). Tofu, along with the greens, is also easier to digest, allowing your body to free up energy for a productive morning. If you have time to prepare the tofu the evening before, do it! The flavors will become even more intense.

#3 Vegan Blueberry Scones

Light scones with a soft coconut taste, fresh blueberries, and rosemary. A party to start the day with. We have added blueberries to the scones now, but other fruits can be used as well, like raspberries or blackberries. Spread with some pure fruit spread and some (coconut) yogurt for a healthy version of traditional scones.

#4 Persimmon Breakfast Tarts

Christmas remains a festive affair, so a cake on the table cannot be missed! These persimmon breakfast tarts prove that cake can be just as good for breakfast! Oatmeal, yogurt & fruit, that’s basically it. The vanilla yogurt in combination with the warm persimmon gives these tarts a sweet autumnal touch. And the smell of baked oatmeal fills the entire kitchen when the tart crusts are in the oven. Not a lot of time? You don’t have to bake the crust of the tarts (saves time), and stir-frying the persimmon is fun but not necessary. So with a few small adjustments, you can have a tart in front of you within fifteen minutes.

Easter bread, Christmas bread, whatever you want to call it, it remains a festivity, that bread! And at Christmas, such a bread with almond paste cannot be missed. This version is vegan, gluten-free, and without refined sugars.

#6 Green Tea Matcha Smoothie

After the Christmas dinner (and maybe all those glasses of alcohol…), replenish all minerals again. One of the best ways to do this and support your liver in removing waste products is through a green smoothie. Matcha is a green tea where you don’t just steep the tea leaves but dry and pulverize the tea leaves. From the powder you get, you make a tea, latte, or, for instance, this smoothie. In this way, you get way more antioxidants and a healthy energy boost.

#7 Gluten-Free Cinnamon Rolls

The classic, but a notch healthier and entirely plant-based. The perfect treat at your Christmas brunch, and if you have leftovers, you can enjoy a roll all week. The cashew glaze makes these rolls into a sweet indulgence. If you want to keep it simpler, you can use some almond yogurt instead. And if you have glaze leftover, add some extra water, blend for a while, and you have a delicious cashew milk that you can use in smoothies, oatmeal, or heat it up and drink it as a (chai) latte.

#8 Vegan Stuffed ”Eggs”

Roasted potatoes with bean filling. That’s what we should actually call this recipe. But that sounds a lot less fun and recognizable than stuffed eggs, right? For the Christmas brunch, we wanted to present a recipe that could replace the stuffed eggs at a traditional brunch. This is what it turned out to be! We are very satisfied ourselves. The potatoes taste incredibly delicious (much tastier than eggs) and they look great on the Christmas table!

Ayurveda in a trendy mug. Something different than a cup of coffee at breakfast. Golden Milk is originally an Indian drink, devised by a yoga instructor. #10 Ginger Tea with Lemon and Fresh Thyme

Even the tea must be just a bit more special at Christmas. Make a large pot all at once or prepare a beautiful glass for everyone. This combination of lemon, fresh thyme, ginger, and vanilla is warming, spicy, and still fresh! Once you’ve tasted this tea, you won’t want anything else! Okay, it’s a little more work than just dipping a tea bag in the water. So make a whole pot at once or simply pour hot water for a second (and third) time into your cup.
