

Warming and full of minerals
This smoothie with pumpkin and persimmon is creamy and perfect for autumn and winter. Instead of water, you can also use a plant-based milk, such as (rice-)coconut milk or oat milk. Note that if you let the smoothie sit for a while, the persimmon will make the smoothie thicker. It is nice to scoop it up as a smoothie bowl or blend again with some liquid.

- 200 g oranje pompoen
- 1 kaki
- 1 tl speculaaskruiden
- 10 g kokosbloesemsuiker
- 500 ml water
Instructions
1. Was de pompoen, haal de pitten eruit en snijd in kleine stukjes. Was de kaki en haal het kroontje eraf.
2. Doe de pompoen (wij gebruiken hem rauw, maar je kunt de stukjes ook even kort stomen), kaki, speculaaskruiden, kokosbloesemsuiker en water in de blender. Mix tot een gladde smoothie. Verdeel over twee grote glazen en serveer. Je kunt de smoothie afgedekt in de koelkast ongeveer twee dagen bewaren.
